Three things we do well
- Broth travels in a sealed 500ml tub at 85 degrees and the noodles in their own box; nothing turns soft on the way.
- Chashu is torched just before packing, so the fat is still rendered when you open the lid.
- Order ahead for tonight and the bowl is built at the time you chose, not before.
