An 18-hour tonkotsu, noodles cut this morning and twelve seats at the counter. On SE Division since 2015.
Broth first, everything else after
The pork bones go on at four in the afternoon and boil until the next lunch service. Noodles are cut on our own machine each morning from Oregon wheat. Chashu is braised the day before and torched at the pass.
Ramen that travels
Broth, noodles and toppings go in three separate containers with a card that says how to put them together. Two minutes at home and the noodles are as firm as at the counter. Times, fees and the area are below, live from the kitchen.
